Super flexible! 10 days in Iceland and I want to see as many waterfalls and hotsprings as possible. I'm okay with renting a van and staying in that/driving and also staying in different hotels along our "route"

Looking at Iceland this summer too...kukucampers seems to be a reputable company. There is a thermal swimming pool (& showers) for every 1300 people in Iceland. There are Airbnb options too. I would want to see some of Scandanavia as well.
